Chilled Cucumber Soup

INGREDIENTS

  • 2 c. Greek yogurt
  • 1 c. vegetable broth
  • 2 English cucumbers
  • 4 green onions
  • 2 tbsp. Chopped fresh dill
  • 2 tbsp. chopped fresh parsley
  • 4 tsp. fresh lemon juice
  • 2 tsp. salt

DIRECTIONS

  1. In a large bowl, combine Greek yogurt and vegetable broth; set aside. In a food processor, purée 1 peeled, diced English cucumber, 2 sliced green onions, chopped fresh dill, and chopped fresh parsley. Add the cucumber mixture, fresh lemon juice, and salt to the yogurt mixture; whisk to combine. Stir in 1 more peeled, diced English cucumber and 2 more sliced green onions; refrigerate for 1 hour. Garnish each serving with chopped dill and croutons.

  • 300gram sayur kobis
  • 2 biji capsicum hijau
  • 1 sb sos tiram
  • 1 sk serbuk perasa ayam

Cara menyediakan dan memasak:

  1. Panaskan kuali, tumis bwg putih & bwg merah hingga kekuningan.
  2. Masukkan kobis, masak hingga agak layu.Jika kobis jenis keras, masukkan sikit air. Masukkan pula capsicum. Kacau rata.

Labu siam juga dapat mencegah hipertensi atau tekanan darah tinggi. Creamy Lemon Parmesan Chicken

INGREDIENTS

  • 1 1/2 c. all-purpose flour
  • 3/4 c. freshly grated Parmesan, divided
  • 1 tsp. garlic powder
  • Zest of 1/2 a lemon
  • kosher salt
  • Freshly ground black pepper
  • 3 boneless, skinless chicken breasts
  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • 2 cloves garlic, minced
  • 2 c. baby spinach
  • 1 c. heavy cream
  • 2/3 c. chicken broth
  • 1 lemon, sliced in rounds and halved
  • 1/4 c. basil, thinly sliced

DIRECTIONS

  1. On a large plate, combine flour with 1/4 cup parmesan, garlic powder and lemon zest. Season generously with salt and pepper and mix thoroughly with a fork. Dredge each chicken breast on all sides with flour mixture. Set aside.
  2. In a large skillet over medium-high heat, heat oil until shimmering but not smoking. Add chicken and sear until golden, 6 minutes. Flip and cook until opposite side is golden, around 6 minutes more. Remove from pan and set aside.
  3. Turn heat down to medium and add butter to pan. When butter is melted add garlic and cook until fragrant, about 1 minute. Add spinach and cook until wilted, 1 to 2 minutes. Add chicken broth, cream, and remaining parmesan and season with more salt and pepper. Stir to combine. Add lemon slices and bring to a simmer and cook until thickened slightly, 3 to 4 minutes. Return chicken to skillet and simmer until chicken is cooked through, 5 to 6 minutes more.
  4. When chicken is cooked, remove skillet from heat and garnish with basil. Serve.

Chilled Cucumber Soup with Roasted Baby Beets

INGREDIENTS

  • 3 tbsp. extra-virgin olive oil
  • 2 small onions
  • 4 clove garlic
  • Coarse salt and freshly ground pepper
  • ¾ c. water
  • 3 large Cucumbers
  • 1½ c. plain whole-milk yogurt
  • 6 baby beets (red, golden, or a combination)
  • 3 tbsp. coarsely chopped fresh flat-leaf parsley
  • 3 tbsp. fresh lemon juice

DIRECTIONS

  1. Heat oil in a medium skillet over medium-high heat. Add onions, garlic, and 1 teaspoon salt. Cook, stirring occasionally, until onions are translucent, about 3 minutes. Stir in 1/4 cup water. Cover, and cook until soft, about 2 minutes. Let stand until cool.
  2. Place onion mixture and cucumbers in a food processor, and process until smooth. Add yogurt, 1 teaspoon salt, and remaining 1/2 cup water, and process until smooth. Transfer to a bowl, cover, and refrigerate until chilled, at least 2 hours, or overnight.
  3. Meanwhile, make the beets: Preheat oven to 400 degrees. Line a piece of foil with parchment. Place beets in center, drizzle with oil, and season with salt and pepper. Fold parchment and foil over beets, crimping along edges to create a packet. Place on a baking sheet, and roast until beets can be pierced easily with the tip of a knife, about 45 minutes. Remove from oven, and let stand until cool enough to handle, about 30 minutes. Rub skins off beets with a paper towel. Cut beets into 1/2-inch cubes, 1/2-inch-thick wedges, or a combination. (Beets will keep, covered and refrigerated, for up to 2 days.)
  4. Stir parsley and lemon juice into chilled soup. Season with salt and pepper. Divide among 8 bowls. Garnish with beets and sprinkle with parsley just before serving.
