
Ingredients
- 6 eggs
- 1 onion finely chopped
- 1/4 tomato finely chopped
- 1 chilly finely chopped
- 3 tbsp butter
- 3/4 tsp cumin powder
- 3/4 tsp coriander powder
- 1/4 tsp turmeric powder
- 3 tbsp milk
- 1 salt to taste
- 1 freshly ground pepper
- 6 slice Bread toasted and buttered
- 1 coriander leaves finely chopped
Method
- heat the butter in a pan over a low flame
- add the chopped onions to the butter and cook till they start to change colour
- While the onions cook, crack the eggs in a bowl and add the salt, pepper and milk to the eggs and beat lightly
- Once the onions are lightly fried, add the turmeric powder, coriander powder, cumin powder and tomatoes and fry for a further 2 to 3 minutes
- add the egg mixture to the pan and stir continuously (like when preparing scrambled eggs)
- Keep stirring till the eggs reach a creamy consistency
- For plating… Place 2 slices of the bread on the plate and heap the Akuri on them
- garnish with chopped coriander
- serve hot
