INGREDIENTS
- 1 tsp. olive oil
- 4 chicken breasts, cut into 1″ strips
- kosher salt
- Freshly ground black pepper
- 2 tsp. chili powder
- 2 tsp. cumin
- 1/2 tsp. garlic powder
- 1/4 tsp. paprika
- 1/4 tsp. cayenne
- 8 corn tortillas, warmed
- 1/2 red onion, thinly sliced
- 1 tomato, diced
- 1 c. Shredded Monterey Jack
- 1 avocado, diced
- sour cream
- cilantro
- Lime wedges
DIRECTIONS
- In a large skillet over medium heat, heat olive oil. Season chicken with salt and pepper then add to skillet. Sauté until almost cooked through, about 7 minutes. Add seasonings, tossing to cover cover chicken and continue cooking until cooked through, 3 minutes more.
- Build tacos: In tortillas layer in chicken, red onion, tomato, cheese, avocado, sour cream, and cilantro. Serve with lime wedges.
